These dried, sweet peppers are the famous Peperoni di Senise, peppers from the village of Senise in the Pollino Mountains of Basilicata. They’re pan fried briefly in olive oil, sprinkled with a little salt and make for irresistible, crunchy appetizers or they’re incorporated into other dishes. All about them in my blog archives.
